Apple Ring Pancakes

I saw this recipe on Pinterest and knew the kids would love it. Apples & pancakes...perfect combo! I didn't make the syrup recipe listed, just used normal maple syrup. I also did not use Bisquick, as I only had Hungry Jack complete mix on hand (worked the same).The kids loved them! I thought they were pretty good, but will try their syrup next time :)

Ingredients:
  • 1 Cup Bisquick Baking Mix
  • 1 Egg
  • 1/2 Cup Milk
  • 1 Teaspoon Pumpkin Pie Spice
  • Zest of 1/2 Lemon
  • 2 Medium Apples, cored and pared

Directions:

Prepare the mix as usual. Add in lemon zest (I didn't have) and pumpkin spice

Cut the apples into 1/8" slices (yep, my cutting board is stained orange. Need a new one!)

Dip slices into batter. Place in a greased griddle

Cook until golden brown on both sides (yep, a new stainless cookware set on my need-to-buy list as well!)

Top with syrup and enjoy! Delish!
