Loaded Baked Potato Soup

Potatoes and cheese...two of my very favorite foods. When combined, I am in heaven! Beth and I were craving a good Loaded Baked Potato Soup one day at work. We found this crock-pot recipe on Pinterest and tweaked it to cook on our little electric stove top at work.
Yep- that's a paper bowl. That's how we roll at work!

You will need:

Bag of hash browns (we used diced)
3 (14oz) cans chicken broth
1 can cream of chicken soup
1/2 cup diced onion
1/4 tsp pepper
8oz cream cheese (don't use lower fat! Won't melt)
Shredded cheese
Bacon (or bacon bits)
Green onion
Sour cream

Make it:

Dump it all (except cheese, green onion, sour cream, and bacon) in a pot
Cook on medium for about an hour
Top with the cheese, green onion, bacon, sour cream
*Beth and I both thought the recipe was good, but lacked something. We added some Mrs. Dash into it and that "fixed" it!*

If you prefer to make it in a crock-pot, leave the cream cheese out until the last hour of cooking.
